Dulce Milk Dream Recipe
Dreams are breads made with fermented dough and fried in oil, filled with dulce de leche, confectioner's cream, guava jelly, among other delights!
It is known that dreams arrived in Brazil around 1920 and since then, they have been part of the menu of several bakeries and without a doubt, this sweet marked the childhood of many people!
These round dumplings are fried, stuffed and sprinkled with powdered sugar, making them even more fragrant and delicious! The version we are bringing you is of dreams filled with dulce de leche and I can guarantee that they are irresistible!

Ingredients for making Dulceau Dream:
Pasta
1 cup of warm milk
3 tablespoons of butter at room temperature
10 grams of dry biological yeast (1 sachet)
4 tablespoons of sugar
2 yolks
1 egg
1 teaspoon of salt
1 teaspoon of vanilla essence
4½ cups of wheat flour (approximately)
Filling
400 grams of creamy dulce de leche
Frying oil
Icing sugar to sprinkle dreams
How to make Dream of dulce de leche:
To begin the dulce de leche dream preparation, add the warm milk (it must not be hot so as not to kill the yeast), sugar and yeast in a medium bowl, mixing gently.
Leave to rest covered with a cloth, in a closed place for 10 minutes until activating the yeast.
Tip: If desired, replace the powdered biological yeast with 30 grams of fresh biological yeast, placing it crumbled in the bowl.
Add the butter, egg, yolks, a pinch of salt, vanilla essence and wheat flour gradually, mixing until smooth.
Do not add the whole wheat flour, as it is necessary to add it until it comes off your hands slightly, keeping the dough elastic to ensure a light and soft bread.
Knead the dough for approximately 15 to 20 minutes.
Kneading is important so that the gluten chains are stretched and aligned, thus allowing the bread to grow and have a more aerated crumb.
To knead, just place the dough on a smooth counter, holding one end of the dough with one hand, stretching it with the other, always returning to the initial position until the dough is smooth and elastic.
Tip: If necessary, add a little more flour, remembering that the dough needs to maintain the texture mentioned above.
Form a ball, rub a little oil on your hands and moisten the dough.
Cover with a cloth and let the dough rest for 45 minutes, indoors.
After the dough rises, cut it into 15-16 pieces of the same size.
Tip: If you have a scale, weigh each ball to make it equal in size. In our preparation, each ball weighed about 60 grams.
If you don't have a scale, cut pieces that are similar in size with a spatula.
Form the balls and let it rest for another 10 minutes.
Meanwhile, heat the oil over medium heat, in a deep pan, with an amount to cover the balls.
Fry the balls for approximately 6 minutes, turning the sides so they are evenly frying.
Drain them with a sieve.
Repeat the process until all the balls are fried.
Tip: Depending on the size of the ball, the time may increase or decrease. So fry with the time and color of your dreams, ensuring that the dulce de leche dream dough doesn't go raw on the inside!
Open each ball with a saw knife, without letting go all the way.
If you have icing mango, fill your dreams with dulce de leche.
Tip: If you don't have this utensil, you can put a generous layer of dulce de leche with the help of a knife.
Sprinkle icing sugar on all sides of the dream.
Tip: If you want to give a special touch to your dream of dulce de leche, try passing them in sugar with cinnamon after they are fried!
